Shrimp and Mussel meat Risotto

Risotto with seafood is truly a delightful dish that combines the creamy consistency of risotto with the richness of seafood flavors. Here's a simple recipe for this delicious dish:

  • Ingredients:
  • 200g risotto rice
  • 100g raw peeled shrimp
  • 100g cooked mussel meat
  • 1 onion
  • half a red pepper
  • 2 cloves of garlic
  • half a cup of dry white wine
  • 0.5 liters of hot vegetable broth
  • half a cup of tomato passata
  • olive oil
  • salt, pepper
  • chopped fresh herbs: oregano, lovage

Preparation:

Defrost shrimps and mussels meat and place them in a bowl. Heat olive oil in a deep skillet and sauté the onion and garlic until golden brown. Add the rice and mix thoroughly. Pour in the wine and simmer over low heat until the rice completely absorbs the wine. Add the broth and chopped bell pepper, and continue cooking. Once the rice softens, add the shrimp, mussels, passata, salt, and pepper. Mix well and cook for another 3-4 minutes. Remove from heat. Finally, add the chopped herbs and mix. Enjoy! Bon appétit!
